April Fools’ Day

Be Careful Today
Someone might be trying to play an April Fools’ Joke on you today. Or maybe you can pull one on someone else. There’s nothing like a little April Fool fun to give you and someone else a good laugh.

Sweet Gum Crispy Fruit Pie
SweetGumBallI am very fortunate to have a beautiful sweet gum tree in my yard. It have very pretty leaves, and a brilliant fall foliage. But you haven’t heard the best part about this tree. It bears a fruit that I call gum balls.

I am going to share with a secret not known to many, by telling you that this fruit from the sweet gum tree can make delicious pies, that I call Sweet Gum Crispy Fruit Pies. I’m also going to show you how to gather and prepare the fruit and give you the recipe for a delicious pie. Believe me, you have never tasted a pie like this.

This shows my tree which is covered with delicious gumballs. If you have a ladder you can pick gumballs from the tree.

I usually gather the gumballs that have fallen to the ground. They will be good and ripe and make the best pie.

This bowl shows about how many you need to make a good pie. I will try to select the gumballs that are firm and ripe.

Now I’m in the kitchen and ready to get started. After removing the stems and washing I’ll be ready to start on the pie.

The Recipe for Sweet Gum Crispy Fruit Pie

  • 1 double-crust pie pastry
  • 4 cups of gum balls (washed and leave whole)
  • 1 tablespoon lemon juice
  • 1 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup raisins (optional)

Preheat oven to 400 degrees. Line a 9-inch pie plate with a pastry circle. In a large bowl, stir together sugar, flour, lemon juice and cinnamon. Add gumballs and, if desired, raisins. Gently toss until coated. Transfer mixture to the pastry-lined pie plate. Trim bottom pastry to edge of pie plate. Cut slits in remaining pastry circle; place on filling and seal. Crimp edge as desired. If desired, brush top pastry with milk and sprinkle with additional sugar. To prevent over-browning, cover edge of pie with foil. Bake for 40 minutes. Remove foil. Bake 20 minutes more or until fruit is tender and filling is bubbly. Cool on a wire rack. To serve warm, let pie cool at least 2 hours.

Don’t forget the ice cream when serving
and the toothpicks for afterwards

Just wanted to take a minute to let you know that I have decided that the iPhone is not as great as I thought. I am going to trade it in for a Droid! :) Love, your cuz' Karen P.S. I figure the Droid is probably as good as that pie recipe you have!
